Work has definitely been done in the recent past, although not sure if any current projects cover HIV / AIDS:

Google Scholar links featuring Folding@home and HIV:

This I think is the answer since 2019:
viewtopic.php?p=307294#p307294

And you can kinda occassionally go through (there's no simple way to search that I know) the current active projects on Folding@home:
https://apps.foldingathome.org/psummary

Also search the consortium announcements for new research being added (near real-time):
viewforum.php?f=24

Hope that helps ...
