Out of curiosity, is there a reason you have disabled SMT? Generally speaking, F@H can make use of SMT and speed-up processing of the WU which means that you can fold more WUs in the same time-frame and get even more points.
This is how I would personally configure those systems:
(Dedicated) Ryzen 9 3950X - Enable SMT
CPU: 21
GPU: 1
(Mixed) Ryzen 9 3950X - Enable SMT
CPU: 18
GPU: 1
Spare: 5 CPUs for other tasks
(Dedicated) 2P EPYC 7601 - Enable SMT
CPU: 64
(Mixed) 2P EPYC 7H12 - Enable SMT
CPU: 126
Spare 2 CPUs for other tasks
